Gaia Olea
Gaia Olea was born out of our love for essential oils, herbs, vegetable oils, clays and other natural ingredients in Kalavasos, a small village in the Mediterranean island of Cyprus. After studying and experimenting with these natural ingredients for a few years, in 2013 we decided to start sharing our products with the rest of the world.
Our soaps, balms, healing salves, therapeutic oils, lotions and other body care products are handmade exclusively with natural ingredients and in small batches, filled with metta vibrations.
This project reflects our love for mother nature and our need to ensure that our products do not harm us, other people, animals or the environment, so every effort is being made to source organic, fair trade, sustainable, ethically and locally produced ingredients when possible.
Our mission is to be a socially responsible business that goes beyond the scope of sustainability and actively contributes to regeneration and restoration. A completely green business is our target, and as part of this, we aim for our lab to operate solely on renewable energy, with plans to install solar panels to reduce our carbon footprint. As we are making all of our products by hand and our business is growing, we seek the right guidance to manage this growth and operate in an eco-friendly way on a larger scale.
We want to ensure that any equipment we purchase is energy-efficient and made with materials that are not harmful to the earth. Therefore, we plan to invest in equipment that will help us become more efficient in the manufacturing process, while also being as eco-friendly as possible.
We aim to receive more training in this area and implement additional SOPs to help us create and maintain an eco-friendly business in all aspects, from sourcing materials and manufacturing to distribution and waste management.
As part of our strategy to become a green business, we plan to develop a marketing plan that will help us reach the right audience—people willing to make lifestyle changes and embrace natural products that are not harmful to the earth, humans, and animals, and that support a healthy ecosystem. To achieve this, we need the help of a marketing strategist who understands the ethics and goals of a green business and can assist us in employing new eco-friendly marketing methods.
Our long-term goal is to source more raw materials locally, with a focus not only on using organic materials but also on ensuring they are fair trade and sustainable. We are gradually starting to grow our own raw materials and hope to expand this aspect in the future, as well as collaborate with more farmers who practice regenerative farming and maintain high ethical business standards.

Lysiotiki Souvla Pais Tavern is a family-run tavern serving a menu that has been carefully chosen inspired
by traditional and modern Cypriot cuisine and by focusing primarily on charcoal grilled and oven baked
dishes. Our aim is to always create a warm, lively atmosphere in a friendly environment.
In regards to sustainability, the restaurant’s culture and approach have been evolving around four thematic categories:
1. The supply of produce, with an emphasis on local and seasonal products, collaborating with local suppliers and producers within a 100 km radius while highlighting the best possible food and value for money that Cypriot cuisine can offer.
2. Environmental parameters such as the quality of supplies and suppliers, waste management, and efforts to save energy and water.
3. Social aspects such as social awareness, fair treatment of restaurant staff, healthy eating, and transparent operations.
4. Operational and financial viability, investing in solutions that enable the restaurant to modernize and effectively manage its operations to ensure long-term survival.
Our strategy is prioritized by implementing a series of strategies and actions throughout our operations and setting the following objectives:
1. Develop recipe costing and effective stock control mechanisms to better understand ingredient consumption, portion sizes, and the actual restaurant food cost and spoilage.
2. The restaurant is already in the process of installing solar panels to cover at least 70% of its energy requirements, reducing energy consumption, costs, and CO2 emissions.
3. Further invest in digitizing/automating restaurant procedures and systems as well as marketing efforts.
4. Waste Management: Implement a comprehensive waste management program to achieve almost zero waste to landfill within four years. This includes composting organic waste, repurposing organic waste and leftover ingredients, encouraging reusable packaging, and promoting recycling among staff and customers.
5. By the end of four years, ensure that at least 85% of our ingredients are locally sourced, produced, and organic. We will collaborate with suppliers who share our commitment to sustainable practices and prioritize ingredients with a lower environmental impact. Dionysus Mansion Restaurant
Dionysus Mansion was launched in 2016 in Limassol and was the first of a series of projects in the
island to honour Cypriot cuisine, but in a different one-of-a-kind way.
The name Dionysus because he was the God of the Vine, Grape Harvest & Winemaking, and the idea of
the restaurant was inspired by wine, fun and theatre/enjoyment. And that is where the concept was born
The perfect setting is not all; even more important is the fresh, delicious local food which will be offered
all day long.
On an island where fast food franchises, Chinese take-outs, and sushi spots have almost dominated the restaurant scene in recent years, there seems to be a lack of quality local cuisine. The aim of ‘Dionysus Mansion’ is to use local ingredients as much as possible and support local producers and farmers, while allowing our national cuisine to evolve.
Our strategy is prioritized by implementing a variety of sustainable practices and strategies throughout our operations, with the following objectives:
1. Energy and Resource Efficiency: Further reduce energy, water, and material consumption by 10% in two years and 15% within the next four years. Implement energy-efficient equipment, water-saving practices, and waste reduction initiatives to achieve this objective.
2. Sustainable Products and Responsible Ingredient Sourcing: By the end of four years, ensure that at least 75% of our ingredients are locally sourced and/or organic. We will collaborate with suppliers who share our commitment to sustainable practices and prioritize ingredients that have a lower environmental impact.
3. Sustainability and Zero-Kilometer Thematic Menus and Events: Further expand the sustainability and zero-kilometer thematic menus and nights/events that the restaurant has hosted in the past.
4. Sustainable Product Design and Partnerships: Design, develop, and bring to market at least three innovative dishes every year that are inspired by Cypriot indigenous ingredients, cuisine, culture, history, and product seasonality. Further expand our partner and supplier network by collaborating with microfarmers and producers to find new ingredients and products.
5. Waste Management and Recycling: Implement a comprehensive waste management program to achieve almost zero waste to landfill by the end of four years. This includes composting organic waste, encouraging reusable packaging, and promoting recycling among staff and customers.
6. Community Education and Engagement: Develop, host, and participate in bi-monthly workshops and events to raise awareness about sustainability and environmental practices among our customers and the local community. Engage with various organizations to promote sustainable living habits, sustainable food, and balanced nutrition.
7. Sustainability Management System and Certification: Develop a sustainability management system and achieve certification with Green Key or EcoCook by the end of 2024.

Charalambos Holiday Cottage
Charalambos Holiday Cottage (Self catering apartments) is owned and managed by Charalambos family and is located in the center of Kalavasos village
Kalavasos village is 4 Kms from Zigi and Governor´s Beach, 30 minutes from Nicosia or Larnaca and 15 minutes from Limassol, centrally located to tour the whole island.
We will also be happy to accept bookings for the entire house, an ideal solution for several families holidaying together or small weddings or private parties. We offer special rates for short and long stay from 1st November to 31st March.
Our logo is a shy local lizard, the “Laudakia stellio cypriaca” or the locals call it “Karkoutas”. As the house was left uninhabited for decades the little lizards “took over”. It was unfortunate that during the renovation process we had to “evict” them.
We are passionate about developing a sustainable rural and eco-tourism facility. Our mission is to be able, after we develop a sustainable facility, to pass this knowledge and know-how to our kids. Following are our objectives that we plan to maintain or even improve upon:
Electricity: We want to continue having all our bulbs as energy-saving on our premises. Outdoors, we have motion sensor lighting and key card-activated electricity for all rooms. Ceiling fans are in all the rooms, together with solar water heaters. We change our sheets and towels only once per week or when requested by guests to save both electricity and water. We dry our sheets in the fresh air and never in dryers.
Waste Management: We recycle, and we do not have individual bathroom amenities.
Social Responsibility: We promote the use of local products such as Christoudia, Gaia Olea, etc., on our premises.
We also organize various events to promote the well-being of the village and our culture. All our rooms are non-smoking. Additionally, we would like to have a bee hotel in the garden.

Bliss’ core purpose is to create high-quality and exquisite desserts/pastries that are authentic to tradition. Through innovation, we aim to create delicious pastries, desserts, and products that are not only a treat for the taste buds but also a treat for the planet by being good, clean, and fair. These three pillars have shaped our philosophy, future vision, and objectives by not only focusing on our core desserts and baked goods but rather extending on the design, development, and production of innovative and locally sourced ingredients that extend the line of sustainable food by focusing on quality rather than quantity.
Bliss, good food is defined as “food that is healthy, green, fair, and affordable.” Good food is not necessarily only fruits and vegetables but also meat, dairy, fish, and grains. In this sense, healthy is the food that offers nourishment and enables people to thrive; green refers to the manner and extent that is environmentally sustainable; fair means that no one along the production line was exploited during its creation; and affordable means that all people can have access to it.
With the term clean, Bliss focuses on the production method of a product, which must be environmentally friendly and adhere to sustainable ethical practices. Our strategy is prioritized by implementing a variety of sustainable practices and strategies throughout our operations and the setup of the following objectives:
1. Energy and Resource Efficiency: Further reduce energy, water, and material consumption by 5% in two years and 15% within the next four years. Implement energy-efficient equipment, LED lighting, water-saving practices, and waste reduction initiatives to achieve this objective.
2. Renewable Energy Integration: Further increase the solar energy production capabilities to generate a minimum of 50% of Bliss’ energy needs within the next four years.
3. Sustainable Products and Responsible Ingredient Sourcing: By the end of four years, ensure that at least 50% of our ingredients are locally sourced and organic. We will collaborate with suppliers who share our commitment to sustainable practices and prioritize ingredients that have a lower environmental impact.
4. Sustainable Product Design: Design, develop, and bring to market three innovative products that are inspired by Cypriot indigenous ingredients and global consumer trends (healthy eating and vegetarian/vegan nutrition, food sourcing, and ethics). Such product examples can be carob chocolate bars, vegetarian and vegan desserts to be produced at Bliss and then distributed to other HORECA businesses.
5. Waste Management and Recycling: Implement a comprehensive waste management program to achieve almost zero waste to landfill by the end of four years. This includes composting organic waste, encouraging reusable packaging, and promoting recycling among staff and customers.
6. Community Education and Engagement: Develop, host, and participate in quarterly workshops and events to raise awareness about sustainability and environmental practices among our customers and the local community. Engage with schools and organizations to promote sustainable living habits, sustainable food, and balanced nutrition.

La bergerie de Petraja
The Bergerie Petraja is run by Gaelle Chiaramonti and, as an extension of her restaurant, the Grenier du Nebbiu, which she runs with her husband, she offers gites for one or more nights. The result is a holiday immersed in the village of San Gavino.
From the outset, as with her restaurant, she has adopted a responsible approach. She favours short circuits, waste management and the use of renewable energy. It is for these reasons that her gites have been awarded the European eco-label.

SASU DIMORA BERTOZZI
The Bertozzi company is proposing to convert the family home in the village of Talio into eco-responsible gites. Several rooms are available in a decor identical to the past when the building was inhabited.
The restoration of the building has been carried out with the utmost respect for all its components. Nothing has been changed, everything has been restored, from the parquet flooring, to the doors and windows, right down to the furniture. The restoration was carried out in accordance with the principles of sustainability, to create a home that respects the environment.

Fortunately, we had local partners who joined and thanks to them we could offer prizes for the most active regular walkers. This event was a huge success and now we are planning the next round for this autumn. We would like to expand the volume of this program and looking for more supporter to reach bigger amount of participants and create a regular platform lovers of walking. Meanwhile our family business offers interactive walks in Szeged. Me and my husband are both professional guides of our beloved hometown. We show Szeged by an innovative way. We focus on not only the most important attractions but the fascinating stories behind the scenes. Our guests can explore the hidden gems of the city with guide or individually through our excercises. All of our walks contain a very important ‘experience part’ when our clients get to know one or more other local entrepeneurs. For instance we take them sailing on River Tisza and they can try driving the boat or they taste local dishes or drinks. In this way they have a better insight from Szeged – they can feel, smell, taste and enjoy the city. So it’s not just a traditional sightseeing. We believe in the power of cooperation and this is one of the main features of our business. We use as many digital solutions as it’s possible currently. We prefer sending every documents for clients online instead of paper form. In addition, we use rechargeble audio guide devices for our walks. One of our new programs is dedicated to kids and their families where we use toys made from recycled plastic and wood. For the future we are planning more walks working with recycled tools. Our biggest aim for the next years is creating complex programs out of the city center where we transport our guests by electric vehicles.

Their farm also serves as a tourist destination, offering visitors a chance to experience lavender fields firsthand and learn about the cultivation process.
We are committed to sustainability, and we work with energy-safe technology. In our office, we use LED technology. In our lavender farm, we harvest by hand, and every processing action takes place on the farm-drying, essential oil distillation, so additional transport is not needed.
Our plan in the near future is to create a webshop for our lavender products. Furthermore, we also plan to design an eco-friendly accommodation in our lavender farm that is a traditional place with the possibility of sleeping, bed and breakfast, eating local traditional dishes, „village guest table” where guests can eat provincial food and drink.

The oil filtration system reduces the amount of oil used in the fryer by at least 30% by extending the life of the oil.
From a waste management point of view, we will continue to favour selective waste collection in the future, striving for zero waste.
The use of soft water will prolong the life of the machines and will make it possible to avoid the use of descaling agents altogether.
By installing a solar panel system, we will create the possibility of using electric cars for future home deliveries, thus reducing the environmental impact of our activities.
We use the least environmentally damaging paper-based packaging for home deliveries, both in terms of boxes and bags.
Our long-term goal is to operate the restaurant in an environmentally conscious way, with two main objectives. The first is to continuously reduce the waste generated, for example through the purchase of returnable rolls and bulk goods, and to adapt restaurant portions and production technology to customer demand at a level that reduces food waste to zero.
